Pumpkin Cake

Ready for a pumpkin cake? It’s much like a carrot cake… but even better! :D THIS was my inspiration for my recipe. Check it out and compare if you want :)

  • springform 20cm
  • 200g pumpkin, grated
  • half an apple, grated
  • 100g butter
  • 2 tbsp erythritol
  • 2 eggs
  • 90g spelt flour
  • 2 tbsp coconut flour
  • pinch of salt
  • 1 tsp baking powder
  • 100g sour cream
  • cream cheese & 2 tsp erythritol icing sugar
  1. Line a springform pan with a baking sheet and preheat the oven to 175°C upper/lower heat.
  2. Mix the butter with the sugar until fluffy. Add the banana, pumpkin and apple and gradually mix in the eggs and the sour cream.
  3. In a separate bowl, combine the spelt flour with the coconut flour, salt and baking powder. Add to wet ingredients.
  4. Pour the dough into the springform pan and bake for about an hour. Keep checking in between!
  5. Let the cake cool down completely. Mix cream cheese with icing sugar and spread over the cake.
  6. Tastes wonderful with a black tea with milk! :)
